Background

A restaurant chain with nearly 30 outlets in Malaysia had recently purchased a water activity meter for food quality checks. They are establishing their laboratory with the goal of enhancing their food quality.

Their quality checks are for the purpose of determining their food products’ specifications, ensuring consistent food quality and determining the life-span of their food products.

Solution

Muser introduced the Freund EZ-200 Water Activity Meter to this restaurant chain to measure the water activity of their food as their required quality checks. Tests are done for food products including:

The water contained in food items does not always exist as pure water. Some of it is a salt or sugar solution, or a protein hydrate.

Water Activity (aW) reflects the state of highly mobile free water within the food item, allowing for the existence of microorganism growth to be confirmed. It also provides clarity regarding the relationship between the state of free water and the speed of microorganism growth.
